Butternut Squash and Sweet Potato Soup

Ingredients:

1 medium butternut squash, peeled, seeded and cut into chunks

1 large or 2 smaller sweet potatoes, peeled and cut into chunks

3 Tbsp olive oil

2 large carrots, peeled and chopped

Guacamole

I'm sorry, I know avocados aren't local, the biggest avocado industry is in California, but they're so good for you, and this recipe doesn't look like much but will fill you up for ages. Eat with bread, oatcakes, crackers etc.

Chilli Cauliflower

  1. Take one whole cauliflower and break into small florets.
  2. In a bowl, mix a three tablespoonfuls of oil (olive, vegetable, nut) with chilli flakes or powder, and then add and toss the florets.
